I love doctoring cake box recipes. Usually I turn them into cookies, but I have really been in the mood for apple cake. The perfect cake for those cool Fall evenings! So I thought I would try my hand at “improving” the spice cake mix I had on the shelf. It really came out better than expected and I will admit to having multiple slices with each meal since I made it. It is that good!
- 1 box spice cake mix
- 3 eggs
- 1.5 cups unsweetened applesauce
- ⅓ cup vegetable oil
- 1 cup chopped walnuts
- 1 diced apple
- Preheat oven to 350 degrees. Grease a 9 x 13 – inch baking pan.
- Combine the eggs, applesauce, and oil in large mixing bowl. Add the cake mix and stir until all ingredients are moistened together. Increase mixer speed to medium and beat 2 minutes scraping the sides of the bowl as necessary. Stir in the nuts and diced apple.
- Pour and evenly spread in 9×13 pan and bake for 40 minutes. Cool in pan on wire rack.
- Top with frosting of your choice once completely cool. Pairs very nicely with Cream Cheese frosting.
