Apple Walnut Spice Cake Hack

I love doctoring cake box recipes. Usually I turn them into cookies, but I have really been in the mood for apple cake. The perfect cake for those cool Fall evenings! So I thought I would try my hand at “improving” the spice cake mix I had on the shelf. It really came out better than expected and I will admit to having multiple slices with each meal since I made it. It is that good!

  • 1       box spice cake mix
  • 3       eggs
  • 1.5 cups unsweetened applesauce
  • ⅓ cup vegetable oil
  • 1 cup chopped walnuts
  • 1 diced apple
  1. Preheat oven to 350 degrees. Grease a 9 x 13 – inch baking pan.
  2. Combine the eggs, applesauce, and oil in large mixing bowl. Add the cake mix and stir until all ingredients are moistened together. Increase mixer speed to medium and beat 2 minutes scraping the sides of the bowl as necessary. Stir in the nuts and diced apple.
  3. Pour and evenly spread in 9×13 pan and bake for 40 minutes. Cool in pan on wire rack.
  4. Top with frosting of your choice once completely cool. Pairs very nicely with Cream Cheese frosting.
  5. Enjoy!
